In Defense of Food: An Eater’s Manifesto
Michael Pollan. Penguin Press, $21.95 (232p) ISBN 978-1-59420-145-5

In his hugely influential treatise The Omnivore’s Dilemma, Pollan traced a direct line between the industrialization of our food supply and the degradation of the environment. His new book takes up where the previous work left off.

Examining the question of what to eat from the perspective of health, this powerfully argued, thoroughly researched and elegant manifesto cuts straight to the chase with a maxim that is deceptively simple: “Eat food, not too much, mostly plants.” But as Pollan explains, “food” in a country that is driven by “a thirty-two billion-dollar marketing machine” is both a loaded term and, in its purest sense, a holy grail.

The first section of his three-part essay refutes the authority of the diet bullies, pointing up the confluence of interests among manufacturers of processed foods, marketers and nutritional scientists—a cabal whose nutritional advice has given rise to “a notably unhealthy preoccupation with nutrition and diet and the idea of eating healthily.”

The second portion vivisects the Western diet, questioning, among other sacred cows, the idea that dietary fat leads to chronic illness. A writer of great subtlety, Pollan doesn’t preach to the choir; in fact, rarely does he preach at all, preferring to lets the facts speak for themselves.

From first page of book: "From legal records, the Abstracts and Deeds, one can reach back to 1820 and find that the water power site was first employed after the property was granted by the state of Michigan, Fee Simple, about 1813.

History has it that an earlier Mill, much smaller, operated until it was destroyed by fire.

Consideration of the present structure was based on the fact that the water flow and site had been proven sufficiently to spend three years constructing the present building, which is 40 x 60, 5 stories high, and with additions added by the current owner.

The structure is architecturally superior to most of the many mills I have visited.

After becoming caught up in what has been a lifelong interest in old mills, I started collecting the Mill Art now displayed on the top floor.

The range of art examples date back over 80 years.  Assistance for the displaying, photographing and writing is by John Grant."

Prevent and Reverse Heart Disease - a book review

     After hearing him in person, I was delighted today to get my Earth Save News, July 2007 and read: "A groundbreaking program backed by the irrefutable results from Dr. Esselstyn's 20-year study proving changes in diet and nutrition can actually cure heart disease.

     Heart disease remains the leading cause of death in the United States for men and women. But, as Dr. Caldwell B. Esselstyn, Jr., a former internationally known surgeon, researcher and clinician at the Cleveland Clinic, explains in this book, it can be prevented, reversed, and even abolished. Dr. Esselstyn argues that conventional cardiology has failed patients by developing treatments that focus only on the symptoms of heart disease, not the cause.

     Based on the groundbreaking results of his 20 year nutritional study - the longest study of its kind ever conducted - this book explains, with irrefutable scientific evidence, how we can end the heart disease epidemic in this country forever by changing what we eat.

     Dr. Esselstyn convincingly argues that a plant-based, oil-free diet cannot only prevent and stop the progression of heart disease, but also reverse its effects.

     The proof is in the results. The patients in Dr. Esselstyn's initial study came to him with advanced coronary artery disease. Despite the aggressive treatment they received, among them bypasses and angioplasties, most were told by their cardiologists that they had less than a year to live. Within months on Dr. Esselstyn's program, their cholesterol levels, angina symptoms, and blood flow improved dramatically. Twenty years later, they remain free of symptoms. Here are the documented results.

     Drop in cholesterol levels: After 5 years in Dr. Esselstyn's initial plant based diet, the average total cholesterol levels of his research group dropped from 246 milligrams per deciliter to 137 mg/dL (above 240 mg/dL is considered "high risk", below 150 mg/dL is the total cholesterol level seen in cultures where heart disease is essentially nonexistent.) This is the most profound drop in cholesterol ever documented in the medical literature in a study of this type.

     Cardiac events: The patients in the study had 49 cardiac events in the years leading up to the study, and had undergone aggressive treatment procedures. Several had multiple bypass operations. After beginning the eating of plants, there were no more cardiac events in the group within a 12 year period.

     Angiogram evidence: Angiograms taken of the participants in the study show a widening  of the coronary arteries, and thus a reversal of the disease.

     Prevent and Reverse Heart Disease offers readers the same simple, nutrition-based plan that dramatically changed the lives of this patients forever. With this eating plan, sufferers of heart disease will maintain cholesterol levels low enough to ensure that they will never have a heart attack. Best of all, the book offers more than 150 delicious recipes that Dr. Esselstyn and his wife, Ann Crile Esselstyn, have developed over the years - showing readers how easy it is to enjoy their new way of eating.

     Dr. Esselstyn wrote: "Recent weeks have witnessed a collapse of the drugs and technology which form the present backbone of cardiology's assault on the coronary artery disease epidemic. ..Pfizer, in late December 2006, announced its long hoped for block-buster new drug Torcetrapib was killing more people in its test run than were dying in the control group. Pfizer had spent more $800 million in developing this drug to raise HDL, 'good' cholesterol and had openly forecast it would reap billions for the company once it came into production.

     "But the research trial was clear and unequivocal with its results. Among 15,000 patients, 82 died taking Torcetrapib and 51 died taking a standard drug to lower cholesterol. Additionally, the Torcetrapib group experienced a greater number of cardiac events such as angina, heart failure, and a need for angioplasty. The independent monitoring group advised Pfizer to halt the trial and they complied. The unfathomable mysteries of human metabolism could not tolerate the assault of this drug. It was making vascular disease worse, not better.

     "The double whammy for cardiology also developed in the second half of 2006. Reports from Europe in September 2006 indicated that patients utilizing the new drug eluting stents were suddenly having heart attacks and some were dying. ...it was disturbing to cardiologists and remains frightening for patients.

     "When an artery to the heart is severely narrowed and causing symptoms cardiologists insert a balloon tipped catheter to the area of blockage and expand the balloon to widen the constriction. The benefit of this angioplasty is lost in 50% of patients because of recurrent constriction in 6 months. Placing a metal scaffold or stent improves the results to only 10-20% recurrent narrowing.

     "Starting in 2003, the stents were coated with a drug which diminished the rate of recurrent blockage after angioplasty. However, it is essential to maintain patients on an anti-clotting drug for 6-12 months to prevent the stent from developing a clot or thrombosis. It now appears that after stopping the anti-clotting drug, 1 in 200 or 0.5% (5,000 nationwide) and 10,000 persons worldwide will have a heart attack and 50% of these will die when the stent fails.

     "These results have so upset cardiologists and the Federal Drug Administration (FDA) that a national conference was called in December 2006 to review this disturbing news. Watching intently and participating were the stent manufacturers Johnson and Johnson and Boston Scientific. Billions of dollars were at stake.

     "Following testimony, experts contend that for patients with uncomplicated disease, the benefits of the drug coated stents outweigh the risks. For patients with more advanced or complicated disease patterns, the outlook is less clear and more research data is required. What is clear is that everyone feels it may be necessary to prolong the period of requiring the anti-clotting drug Plavix from months to years or indefinitely.

     "However, Plavix is not without complications: it promotes bleeding, which may mean a gastrointestinal hemorrhage as well as easy bruising. The most desperate situations occur when a patient taking Plavix must stop it for dental work, hip or other major surgery and colonoscopy. Will they have a heart attack or die from a stent clot when Plavix is stopped? This scenario has occurred and is continuously encountered. It is as if a therapy for one disease now is painting patients into a corner from which they cannot escape when other illnesses require surgical therapy.

     "This Gordian knot has lead leading cardiologists to question stent therapy.

     "Dr. Eric Topol, a member of the conference panel stated, "There's a much more liberal use of angioplasty and stenting than there needs to be."

     "The head cardiologist at Kaiser Permanente, Dr. Calvin L. Weisberger added, 'A large pool of angioplasties and by-pass surgery are being done without scientific evidence.'

     "The hard science - which seems not to be prominent in all these discussions - is that it is not the major blockages which are treated by angioplasty and stents which account for heart attacks. The small unstable juvenile arterial plaques are prone to rupture and cause over 85% of heart attacks, and they are not treated by angioplasty or by-pass surgery. Then why do cardiologists treat the blockages unlikely to cause the heart attacks? There is a lingering belief that somehow the patient will be improved by widening the opening, and there is the unspoken force of money - huge guaranteed money from doing these procedures.

     "Then there is the harshest critic of all - scientific research. Study after study indicates for most patients undergoing angioplasties and stents, there is no increase in survival and no decrease in heart attacks.

     "Why might this be a time to rejoice? The morbidity, mortality, expense and transient benefits of a high technology approach toward the coronary disease epidemic has failed. It is time to realize that the answer to a faulty lifestyle epidemic is not drugs and technology - it is lifestyle.

     "The epidemiologic evidence that coronary artery disease does not exist in cultures consuming plant-based nutrition is robust and overwhelming. There is clear evidence that cultures which switch from a plant-based diet to a western diet develop an epidemic of coronary heart disease. Lewis Kuller, Professor of Medicine at the University of Pittsburg School of Public Health, based on his 10 year cardiovascular health study states: "all males 65 years of age or older who have been exposed to the traditional western diet have cardiovascular disease and should be treated as such."

     "This toxic diet with its burden of animal protein, dairy, processed oils, white flour products, sugar and excess saturated and trans fats and free radicals marinates in our bodies injuring our delicate cellular matrix with every bite at every meal. Science shows us how this occurs. We depend mightily on the capacity of our endothelial cells, which comprise the single cell layer lining our arteries, to manufacture nitric oxide. Nitric oxide is the strongest vasodilator in the body. (Dr. Flora interjects: watermelon and fresh papaya and home-ripened pineapple juice from outside the body going in do a fine job of vasodilating when the oxide is low until the body can catch up! Salt is a vasoconstrictor. Throw it away.) It causes blood vessels to enlarge, prevents blood flow from being sticky or sluggish, and inhibits arterial plaque formation.

     "The brachial artery tourniquet test quantifies the endothelial responses. The test requires an ultrasound measure of the diameter of the brachial artery below the elbow before and after an upper arm tourniquet stops blood flow to the forearm for 5 minutes. Normally, when the cuff is released and the brachial artery ultrasound measurement is repeated, the artery dilates or widens. This occurs from a healthy out-pouring of nitric oxide from the endothelium. When volunteers consume cornflakes, their brachial artery test is normal. If they consume sausage, olive oil, or saturated fat, they fail the test. The ingested fat so injures the endothelium that it cannot produce nitric oxide. Regular consumption of the toxic western menu is a cardiovascular disaster. The time is long overdue to challenge the failure of drugs and technology to stop the coronary disease epidemic.

     "The natural next question is can patients who have severe coronary artery disease arrest and reverse this disease by consuming a totally plant-based diet?

     "Dr. Dean Ornish (PCRM) and this author have investigated this question through scientific peer reviewed study. Dr. Ornish reported his results at one year and again at 5 years and most recently at 21 years in a book for the public Prevent and Reverse Heart Disease, Avery/Penguin, February 2007.

     "These studies indicate that fully compliant patients decrease the episodes of angina or eliminate them, decrease their cholesterol, decrease their weight, increase their exercise capacity, and arrest and selectively reverse their disease on follow-up x-rays of the coronary arteries. Seeing these patients thrive beyond 20 years of initiating their plant-based therapy is the most powerful reason for wanting the cardiology community to embrace and utilize plant-based nutrition.

     "There is no morbidity, mortality or added expense with plant-based nutrition and benefits endure and improve with the passage of time. Cardiologists say they doubt that patients will follow such a nutritional change. My experience in counseling hundreds of these patients indicates this concern is flatly not true. As a matter of fact, patients rejoice in the knowledge that they have become the leader/locus of control over the disease that was destroying them and are distraught that they were never told of this option by their cardiologist.

     "In summary, the dark shadow cast over cardiology, through failure of its miracle drug and the melt-down of drug eluting stents with unforeseen clotting resulting in heart attacks and death should motivate us to look more closely at a proven therapy which is effective and endures and has the potential to eliminate the coronary heart disease epidemic, as well as other chronic western illness such as strokes, hypertension, adult onset diabetes, obesity, impotence and dementia."

     Dr. Esselstyn is a preventive cardiologist consultant in the Department of General Surgery, Cleveland Clinic Foundation, Cleveland, Ohio, and the author of Prevent and Reverse Heart Disease.

The Sunfood Diet Success System - Book Review

The Sunfood Diet Success System, by David Wolfe, Hardcover, 624 pages, Maul Brothers Publishing. This is the sixth edition of this book, first published in 2000. I skipped over it for all these years because I've read so many other books on the Raw Living Foods lifestyle that I didn't think I needed to read another. But at the urging of Raw Fooder Helen Terry, I ordered a copy. I'm glad I did.

While I've always enjoyed hearing David speak about Raw Living Foods, in this book he includes a lot of information that isn't in his lectures. I especially enjoyed the motivational philosophy that he covers in the first chapters, and how he relates Living Foods to not only health and disease, but also faith and the environment.

For 35 years the nonprofit Center for Science in the Public Interest has published hard-hitting studies exposing the dreadful nutritional content of movie theatre popcorn, fast foods, and restaurant meals.

Saving Graces, by Elizabeth Edwards

This is a letter written to my dear friend Steven Gibb, former Program Director of Creative Health Institute, and creator of RawFriends.com.

Dear Steven,

As you may have heard, I've finished writing a book about you, and it is about to be published. Actually, it is not you in particular (although you may recognize yourself somewhere on its pages). It is about the bigger "you" -- the "you" I talked about in the 2004 campaign, the "you" who sustained us for those two years and who sustained me throughout all the valleys and peaks life has brought.

The book is called "Saving Graces: Finding Solace and Strength from Friends and Strangers." I hope it is a tribute to the power that community can have in our lives. I know that I have been -- and I believe we all are -- always stronger and better when we let the strength of others help us. "Saving Graces" is about those connections and the support they've given me in my life.

I wanted to share "Saving Graces" with you before the book comes out -- next Tuesday -- because I know firsthand that some of the most important connections in our lives may not be face-to-face. I found them in the mail, on the phone, and -- as I describe in the book -- certainly through the internet.

I've been blessed with some amazing gifts in my life, but like most families, our family has faced some difficult challenges. Some have been very public; some have been very private. But whatever the challenge, I have never had to face it alone. Every step of the way, my relationships -- with family and friends, with strangers who have shared similar experiences, and with supporters and believers united in a common cause -- have given me strength and carried me through.

In my book, I write about what it was like to grow up in a military family, moving frequently and learning to make friends wherever we went. I learned, too, that a room of strangers is just a temporary condition, which can be cured by a smile and handshake and making the effort to find what we shared. The lessons of the support and comfort from my extended Navy family have been invaluable every day of my life. I write about the bonds we formed in the 1960s when young people across this country were opposed to the Administration's commitment to a war in Vietnam. I write about meeting John and marrying John, and the simple pleasures of exchanging favors with other parents and neighbors as we raised our family and built careers in Raleigh and Chapel Hill. And, of course, there's plenty to read about the privilege, responsibility, and even fun of a presidential campaign and about the thousands of incredible people we had the opportunity to meet.

I also discuss my fight against breast cancer -- especially the overwhelming support of the tens of thousands of people who made me feel like they were fighting beside me. They -- you -- wrote, emailed, prayed, and, in perhaps the greatest gift, shared personal battles against cancer and illness. I will never be able to thank them -- you -- enough, but this book is a start.

Finally, as hard as it was to write, there is no way I could write about the power of community in my life without writing about the death of our precious son, Wade. As many of you know, Wade died in a car accident in 1996. So many people reached out to us -- with compassion and love, of course, and often with their own stories of loss and grief. I cannot overstate what those connections meant to me. Their support and inspiration -- much of which came online -- will always be with me.

So this book is a thank you to all those who have made me stronger, and it is a message to anyone struggling to cope with the daunting challenges that life sometimes lays before us. Optimism was easy even in the face of obstacles because you believed in tomorrow and told me there would be brighter days ahead -- and you were right. Thank you for taking a moment to read this. And thank you for being a member of our community.

"Eating Green" means more than just eating greens

(News & Observer) In "Six Arguments for a Greener Diet," Michael Jacobson, director of the consumer group Center for Science in the Public Interest, looks at the evidence linking diet, health, and environment, as well as food and agriculture policies and animal welfare.

He advocates a "greener" diet centered on fruits, vegetables, whole grains, nuts and beans, and less emphasis on animal products.

Among his reasons for "going green" with your diet:

* You'll lower your risk for cancer, heart disease and diabetes and be healthier overall. According to Jacobson, the saturated fat and cholesterol in beef, pork, dairy products, poultry and eggs cause more than 63,000 fatal heart attacks each year.

* You'll lessen your chance of foodborne illness. Animal products carry most of the bacteria and viruses that cause life-threatening foodborne infections, and factory-farms increase the risk of flu epidemics.

The government's food safety system is "perpetually underfunded and riddled with holes," he points out.

* You'll help preserve the soil. Feed crops for livestock deplete topsoil and cause erosion. Half of the fertilizer produced in the U.S. is used on crops fed to livestock, and the energy used to make the fertilizer could otherwise provide power for one million Americans every year, Jacobson says.

* Eating green would result in more and cleaner water. Jacobson notes that agriculture uses about 80 percent of the freshwater in the U.S., and fertilizers, antibiotics, pesticides, manure, and soil from eroded land pollute the water.

* Green food equals cleaner air. Livestock manure and fertilizer are the largest sources of noxious ammonia releases. Methane gas produced by livestock and manure in the year 2000 contributed as much to global warming as the carbon dioxide produced by 33 million cars.

* A green diet is a kinder diet. While the book doesn't push a vegetarian diet for everyone, it does make the case for policies and practices that would reduce the suffering of animals raised for food.

It ends with recommendations for individuals who want to change their diets as well as suggestions for government policies that would support a greener national lifestyle.

Six arguments for a greener diet
