Cut a large zucchini into 3 inch sections and hollow out the seeds to a depth of 2 inches.
In food processor chop 1 medium cucumber, 2 medium tomatoes, 1 stalk of celery, 1 clove of garlic, 1 tbs of dried oregano, until of saucy consistency. Other spices, such as cumin, curry or parsley may be used for variation. Experiment!
Put the sauce in the hollowed section of the zucchini and top with Vegan Parmesan Cheese. The "boats" can be nestled in a sea of raw spinach topped with the extra sauce.
