3-4 medium Vine ripened Tomatoes (cut into ½ inch pieces)
2 Garlic cloves (peeled and minced)
1/2 cup fresh Basil leaves (minced fine)
2 tablespoons Extra Virgin Olive Oil
1/2 teaspoon Celtic Sea Salt (optional and to taste)
Place all ingredients in bowl, mix well.
Allow to marinate for 1/2 hour in refrigerator.
Serve with whole grain bread, or pasta.
